This wine shows a brilliant yellow-greenish colour, fruity, with white blossoms, pineapple and citrus flavors. It sits well-balanced in mouth, with a pleasant causticity and minerality. This wine gives a great length of mouth, & could be a classic, direct wine. A conventional approach to vinification is polished with the Petit Chablis and Chablis matured in stainless steel tanks and the Chablis 1° Cru fermented in oak barrels. The point is to create fresh, classically styled Chablis wines, which highlight the unmistakable terroir of the region. In 1986 Claude Chevallier, who incorporates a enthusiasm for the wines of Chablis, restored the family convention of wine making and set up Domaine Chevallier. Wine making and cellar entryway are found within the little town of Montallery – tucked into the slopes between Courgis and Beines. The Domain covers fair 13 hectares over 3 monikers. 4 hectares in Petit Chablis, 9 hectares in Chablis and 0.3 hectares in Chablis 1° Cru.
