Tasting Note: A surprisingly varietal expression of Syrah Rosé, with meaty and savoury notes accenting the strong red berry fruits. Méthode ancestrale is an ancient technique for making sparkling wine, where the wine is bottled before primary fermentation is finished without the addition of yeast or sugar. Hand-harvested, manually basked pressed, naturally fermented in old oak, unfined and unfiltered with no sulphur added. The wine remains on lees in bottle, so will continue to evolve. Fresh and delicately carbonated, opening each bottle is a surprise – reminiscent of the time and place in which it was bottled. Zero sulphur added.
