Tasting Note: “In barrique, the wine just got better and better until almost a year later it was bottled. I have spent a lot of time pondering and trying to decipher how this wine has defied the academic side of things and has delivered what I think is our most intense and perhaps a purist expression of sauvignon blanc grown on the brown orthic gravels of the Waimea Plains. I can only conclude that by racking off the clear juice you are actually concentrating the solids left behind and thereby gain a lot of extraction. This is very similar to the saigne`e method of rose´ production where you bleed off a rose´ and also intensify what is left behind due to the increased skin to juice ratio. The name Feral Lahar is probably self-explanatory. It was feral and it was volcanic in appearance! The label is based on the inside lining label of a Blancq-Olibet ‘Fandango’ beret which just happened to be the beret worn by Che Guevara. Fitting? I think so.” – Michael Glover, winemaker
